Chocolate button and Smarties Cookies using the Hummingbird Bakery recipe


As you know I love to cook and last weekend I decided to bake us all a little treat....COOKIES!! Now if I am ever in the mood to do some baking the first thing I pick up is the Hummingbird Bakery Cookbook. There are so many delicious recipes for cakes, pies, cupcakes and desserts you are completely spoilt for choice.

Ingredients (makes 24):

  • 225g unsalted butter
  • 350g soft light brown sugar
  • 2 eggs
  • 1/2 tsp vanilla extract
  • 400g plain flour
  • 1/2 tsp salt
  • 2 1/2 tsp bicarbonate of soba
  • 225 of chopped chocolate. (You can use anything, chocolate buttons, smarties, malteasers or m&ms.)



Start off by mixing the butter and sugar together to make a sandy consistancy. 



Now for the eggs, add them into the mixture one at a time. Then add the good quality vanilla extract.


Slowly add the flour, bicarbonate of soda and salt. Make sure everything is mixed together.



Then for the fun bit, adding in the chocolate. I decided to split my mixture in half and do two separate types of cookies, chocolate buttons and smarties!


Put them into a pre heated oven at 170 C for 10-12 minutes. Do keep an eye on them though!


Once they are cooked remove them from the baking trays and let them cool. Then enjoy!!!!
