Baking in my new Kitchen - Chocolate and Vanilla Cupcakes


Ever since we have moved in I have wanted to get back into baking and after watching The Great British Bake Off last week I decided to put down the paint brush, stop emptying boxes and put on my apron and pick up the wooden spoon.

My gorgeous Auntie gave me a lovely book full of different cupcake recipes along with a really cute cupcake cases and box pack from Lakeland......she knows me so well!! So after flicking through the book, and dribbling on nearly every page, I decided to go for a plain chocolate and vanilla cupcake.

You will need:

Ingredients for the cakes:-
110g butter, softened
110g sugar
2 eggs
110g self-raising flour
1tsp baking powder
1tbsp cocoa powder

For the icing:-
110g butter
225g icing sugar
1tsp vanilla extract
2tbsp cream

Decoration:-
Strawberries
Grated chocolate



Add all the cake ingredients to a large bowl and mix until all combined. Preheat the oven to 190 degrees whilst you pop the cupcake mixture into the cases. This recipe will make 12 cupcakes so place the cases onto a muffin tray and evenly fill the cupcake cases until all the mixture is gone. 

Place them into the oven for 20 minutes until they are cooked.


Once the cupcakes have cooked, take them out of the oven and place them on a cooling rack until they are cool.

Now comes the fun bit, decorating! Mix together the ingredients for the icing and cover the tops of the cupcakes. Then finish by sprinkling on some grated chocolate and strawberries. 

How cute are these cases and presentation boxes!! I'm so in love with the red polka dots and the strawberries really tie it all in.
There are so many different recipes in this book, black forest gateau, chocolate meringue and toffee. I can't wait to get back to baking now in our new kitchen!
