Weight Watchers Chicken and Pineapple Stir Fry

Serves 2
9 Pro Points Per Serving

100g Long grain white rice
1 tsp Sunflower oil or spray oil
300g Skinless chicken breast cut into strips
4 Spring onions
125g Chopped pineapple
1 Red pepper, sliced
2 tsp Grated fresh ginger
1/4 tsp Chinese 5 spice powder
2 tbsp Light soy sauce

1. Start cooking the rice according to the pack instructions. Heat a pan with the oil and add the chicken. Stir fry until it is browned.

2. In a separate pan add the spring onion, pineapple and pepper to the pan and stir fry for 2-3 minutes.

3. Reduce the heat and add the ginger and 5 spice powder and stir fry for a further 2 minutes. Add the chicken to the peppers and pineapple pan and stir fry for another minute.

4. Once the rice is cooked drain it and serve onto the plates or bowls. Top with the chicken and vegetables and enjoy!

  1. I often eat out at Thai restaurants and I love finding pineapple in the stir fry, but always forget what a good idea it is when cooking my own! Thanks for reminding me to put pineapple on my next shopping list haha
