Slimming World Friendly Butternut Squash, Sweet Potato and Chilli Soup

When it's cold outside there's nothing better than a hot bowl of soup to warm you up and get you through your day. Plus this delicious recipe is completely free on Slimming World and full of speed food! This is also great to make in large batches and then divide up into portions to pop into the freezer for the days when your struggling to find something to have lunch. 

You will need:
A large butternut squash
3 medium sized sweet potatoes
1/2 pint of vegetable stock
Chilli flakes

Start off by peeling and chopping all your veg and boiling until tender. Then place all the veg in a roasting tin and cover in frylight. Pop into the oven and roast for 20 minutes until golden. 

Once they are cooked place all the vegetables into a large mixing bowl and using a liquidiser or blender make sure everything is completely mixed together and there are no lumps. 

Next up is adding in the chilli flakes. Now if you're not a fan of chilli you could just leave it out but I love to add a little spice into this soup so we tend to add about a quarter of a teaspoon of chilli flakes and again go over with the liquidiser to make sure it's all mixed together. 

Pour in the vegetable stock and make sure everything is mixed well. 

'Et Voila!' There you have a super scrummy super food filled soup. You could also add a nice wholemeal roll to go along side of this for your Healthy Extra B choice.

Long time no speak...

Firstly Happy New Year everyone, can you believe we're in 2016! 2015 seems to have absolutely flown by and boy oh boy was it a good year. I know I've been a little MIA since Autumn but life has been a little hectic over the past few months and I didn't feel like I could give my blog my all. I didn't want to just publish any old nonsense just so say that I had kept up to date, so I made the decision to have little break and then come back when I was ready. I've really missed blogging and also being a part of the blogging community! But I'm back now and I can't wait to get back into it.

So let's catch up. Where to start? Well if you follow me on instagram you will see I'm now 4 stone lighter....can you believe it. If someone had told me back in April when I joined Slimming World that by December I would go from a size 18 to a size 10 and lose over 4 stone I would have thought they were mad. I've absolutely loved Slimming World, the diet works perfectly for me and if I'm really honest I've done absolutely no exercise so it just goes to show if you keep to a good diet you can lose the weight if you really want to.

The wedding plans are in full swing, I can't believe I can now say 'I'm getting married this year.' There's still no sign of Bridezilla although I can feel her there trying to push her way out. I'm starting to panic slightly that the date is creeping up on us. We've got all the main things sorted, venue, food, church, car, photographer etc. The next thing on my list is the dress. I've been putting it off till I lost the weight but it's got to the point where when I tell people I haven't looked at dresses yet they give me that worried 'oh really' look, so I've booked in for the end of the month to visit a local dress shop. I've booked out the whole shop for us so we can have a really lovely day. If you have any tips for my first wedding dress appointment then please let me know, I'm so nervous!! We've got to push on with things now and get more organised.

The three men in my life are doing well. Dan's so busy with his photography it's so nice to see him doing something he loves and that he is so good at. The pets are just as mad as ever. I thought that as they got older they would become more lethargic but there is no chance of that, we wouldn't have them any other way though!

The house is still a work in progress. I still spend my life on Pinterest dreaming of an unlimited budget to turn the house into the house of our dreams but I'm still yet to win the lottery to make this happen. We'll get there slowly but surely.

Anyway I think that's everything for now. I can't wait to get writing again.
